I have been wondering that exact thing since I bought the game in September. I'm beginning to think there is no way to do it. I've tried practically everything. The X button used to be a fake snap. Now that gives allows you to lead block for your running back. What I've been using is Z+L quickly to simulate the ball being hiked. That won't cause the computer to jump, but other humans will.
